I've had a paid Adobe subscription for almost ten years.  It feels like things I was able to do are now behind a pay wall and I'm looking for alternates to Acrobat for tasks like reorganizing pages, converting spreadsheets in PDF to excel, etc.

If you have a subscription, you can do all those things. If you do not have a subscription, you have the free Acobat Reader and you could do only a limited amount of things.
