No format option under properties while making forms

Click on Tools - Prepare Form and then click on "More" at the right side of the window and then on "Revert to Acrobat Form". In the future, do not tick the box that says "This document requires signatures" when creating the form.

Hope you are doing well and sorry for the trouble. As described, There is no option tab in properties to change the format for the field ex. YYYYMMDD

I have checked the screenshot that you have provided and found that you have Adobe Sign Form, please open the PDF and go to Tools > Prepare Form then  click on 'More' in the right hand pane and select 'Revert to Acrobat Form' to get the format option under properties.
