I have done some experimenting and here is what I found. The removal of colours can be related to an Accessibility setting.
From the Acrobal Menu, choose Preferences...
Then in the left click Accessibility.
Make sure the Replace Document Colors under Document Color Options is unchecked.

Below is a screenshot with the settings.

Hello Dean_Utian,

Many thanks for spending your time in my troubles.
Unfortunately the reason couldn’t be located in the accessibility settings and as communicated, the App internal Preview showed the colours correctly as also another Pdf (-Expert?) App on my iPad opened the same Pdf correctly.
But, while making the screenshot - attched below – what a surprise - the Pdf suddenly had become colored and I’m still without an idea about the reason.

So the right answer will still be very welcome but somehow it seems to be working right now.

So thanks again, kind regards and have a good week 🙏

Chris

Hi @chrisc31839324
To confirm - you open the PDF in Acrobat Pro and it shows as grayscale? Try open the PDF in a browser and see if shows as colour there as a test.
Can you open any other PDF with colours and display correctly in Acrobat (so is it just the one PDF)?
