When I convert a folder of emails to PDF it works fantastic.

However, is there a way to change the leading email to show the email address rather than just the name?

Here is a screenshot of the email address header. My question is, can the email address be show rather than just the name, ie Adobe Community.

That part isn't controlled by Adobe.
You have to check if that can be done using Outlook or the email client you are using. Example being: https://support.microsoft.com/en-us/office/change-the-display-name-that-email-recipients-see-2b53331a-ba2a-4803-88dc-ac9fe376c8a9
