PDF content shifts and deletes after adding text box and saving document

Hello,
I came across this issue when editing a PDF statement downloaded from PG&E's official site. Several other PDFs downloaded from PG&E sites worked as intended when I added a text box except this one.
Whenever a text box is added, partial content of the PDF looks like it got shifted or deleted after saving the document.
We have tried saving the document as a optimized PDF with Transparency selected, tried using a different computer and a different user account, tried running repair install and restarting computer. Still have the same issue with the PDF.
I included snippets of the PDF, the edited one contains PO Test#12345 under the total amount section. The one with total $220.68 is the original statement.
Any help would be greatly appreciated. Thank you!
