PDF distorts when opening in Edit

I was given PDF files to edit - the text, the images, the ackground color of tables. When I open the PDF on Acrobat and edit it - it seems to distort in this weird way, not correctly picking up what is image and what is text. Any troubleshooting I can do or does anyone know why it would do this? Is there a problem with the PDF file or? Screenshot for reference

What program created the pdf? Some pdfs are harder to edit than others and Acrobat generally can't easily make extensive edits. Are you able to get a copy of the original document and edit that? that would probably be your best option. A work-around would be to place a copy of the pdf into InDesign, then extract needed images from the original pdf and place them into InDesign and export to a new pdf, you can also edit the original pdf in Illustrator, with the understanding that Illustrator is not a universal pdf editor and things can change.
