How do I go about extracting a single page from a doc to send in an email

You open up the PDF file in Acrobat, choose the Organize Pages tool and from there select the Extract tool, choosing the page or pages you want extracted and whether to have a separate document for each extracted page. The extracted page(s) will open up as a separate window.

From there you can directly click on the e-mail icon to send that PDF file as an attachment via your e-mail client. Alternatively, you can use the Save as command to save the page(s) as a new document and then send that PDF file as an e-mail attachment from your e-mail client from outside of Acrobat.

There is no extract tool that I can find.

It’s not enough to pay for Acrobat, you also need to stop using the free Acrobat Reader. Observe the difference so you tell which one is running.
