How can I prevent a PDF form from someone adding a digital signature field?

Apply a security policy to it that prevents editing it. By no means is this a 100% secure solution, though.

Alternatively, you can sign it yourself. If someone else then edits it, your signature will become invalidated.

I had the same issue, so I kept my account logged out in case of any disturbance. You can try this too, it worked for me pretty well.
