ive figured out how to put multiple pdfs into one file and save it all as one single pdf but is there a way to save as  project so that i can go back to it later and add more pages re order etc ( before i flatten it into one pdf  ) the reason I ask is id like to start building it but i dont see a way of saving it to go back to later .. the only way i can figure it out is i have to build it all when i have EVERY page finished.. its gonna be something like 100 pages so id love to build it now and just drop in more sheets later and then when finished flatten into one pdf

Use Tools > Organize Pages, there you can add pages.

It's usually better, though, to just edit your single original (Word document or whatever) and remake the whole PDF each time. Do you see obstacles to working this way? Sometimes it's impossible, but sometimes people are overlooking a simpler solution.
