Is there a setting that I can adjust to be able to just drag documents out of a portfolio? Or is highlighting the docs and exporting them the only option? I have to say it seems every time Adobe updates Acrobat, they make it less user friendly.

Sorry for the delay in response.
In the current version of Adobe Acrobat DC, you can only select the file in the portfolio and use "Extract from the portfolio".
It is not possible to select it and drag out of the portfolio.
