Redacting form fields after getting signed

I have created a form that i send out and get signed using Adobe Sign.  When I get the form document back I would like to redact or hide several form fields but I can't redact those fields.  How can I save those documents with the data hidden or redacted so I can see it again if need be. Thanks,.
