If you have Acrobat Standard or Acrobat Pro (not Acrobat Reader), go into Edit mode, click on the item, and delete it.

Yes but that doesn't allow me to delete the word sample stamped across the document.

When you added the stamp, the panel on the right side of Acrobat should have opened up with a place for you to make some comment. If you right click on the comment, you can select Delete.

 

Also, if you try to close the document, Acrobat will ask you if you want to save the changes. If you click no, that will also delete any stamps that are created.
