Restrict certain boxes

I would like to restrict certain boxes on my Adobe fillable forms so that only I can enter information (i.e. a permit number and my signature). How do I only restrict those two boxes?

There's no real (secure) way of doing it. You can hide them, if you wish, and then make them visible when you want to fill them in, but anyone with Acrobat will be able to reverse that quite easily. Not if they use the free Reader, though.
