Is there a way to save an editable .pdf form (after it has been updated or filled out) as a "read-only" .pdf?

The best way is to have them digitally sign the form (and set the signature field to lock all the fields). It will not prevent editing, but if the file is edited it will invalidate the signature and you could prove that it was edited.

Yes (as far as any PDF is "read-only"). You can flatten the field, or set the fields as read-only, and then digitally sign it to prevent editing.

OK, got it, thanks.  What about a scenario like this... I have a proposal template that an account manager will edit and develop specifically for a prospect.  I would like the account manager to save this form as a standard read-only .pdf, is that possible?  Basically, I don't want the prospect to be able to make changes.  This seems like it should be easy using "save as," but I'm missing something.  Thanks!

If the prospect has any knowledge or good luck they will be able to change the file. It is very important not to base any decisions on assuming they can't. You can stop it being fillable, certainly.
