Scanning defaults and shortcut on Mac

Does anybody know how to change default scanning settings (one/both sides, prompt for additional pages, new document/append to existing, etc.) to customize it to my needs? This is available for the PC version for quite some time.

Along the same lines: How to create a shortcut or a customized button so I can replace the file/create/scanner with one click? (I scan a lot...)

Thanks!!
