very basic - how do I assign which field is next when TAB is pressed?

I know this has to be basic but I cannot find the guidance.

It's on the right hand column - just move the item to the desired location.

In Form Edit mode, when the fields are sorted by tab-order, yes. Another option is to set the tab order for the entire page via its Properties, under the Pages panel on the left.
