I have a table in my document that is spread over two pages.  Is there a way to view them side by side while keeping the rest of the document in single page view, and then save the configuration so it doesn't have to be redone every time the document is opened?

No. Just merge the two pages into a single one.

If you're on Windows you can use the Adobe PDF printer and the Multiple option in the Print dialog to print two pages onto a single sheet and save it as a new PDF file. Then remove the old pages and insert the new one, instead.
