what if I have a large pdf that is actually several documents just bundled together.  Is there a way to mark document breaks and then tell adobe pro to split out those files?  Additionally does aodbe dc pro have a feature to try and find those document breaks to help with that process?

    Bookmarks can be added to mark where each document starts within the merged file, and later on to split the file into individual documents.

    This isn't as much an issue of Acrobat functionality as it is a feature of the PDF standard. The ISO PDF standard does not have any formal concept of what you describe as document breaks and as such, Acrobat has no way of splitting out those files.
