When I add text to a PDF, it does not display correctly - spacing if off

Using Acrobat Pro v. 20.012.20048 on a Mac running Catalina 10.15.7. Ever since I upgraded to Catalina, when I add text to a PDF, it usually does not display correctly (but sometimes does). The spacing of letters is "off," and some letters appear jammed on top of others, so much so as to be unreadable. There are no updates (yet) to this version of Acrobat. Restarting the computer has not helped. Closing the file, opening in Preview, re-saving it as a PDF, and reopening it in Actobat has not helped. See photo below, where the text I added should read "or try adding some red wine." Also, I sometimes cannot get the text to change color - but sometimes I can. I think this is happening primarily on PDFs that existed when I was still working in Mojave.
