Why can I not edit fields after signing and saving document?

Question

I received a PDF application from someone else. I proceeded to add all the necessary form fields to the document myself. I then filled them out and signed the document. I then saved it. Now I am locked out of editing all fields and I can't change anything or delete anything.

The document has no security, and I never had to unlock it or anything. WTF is going on here?

Signing is FINAL. Not like paper where you can sign an unfinished form, the signature wraps up proof of everything you typed. Start with the unsigned original.
