I am losing my mind. When I attach a PDF file to an email it changes to an XPS. I tried to disable XPS in my settings but it is still changing them to XPS.  Does anyone know how to stop this madness???!!!!

It wouldn't surprise me if this was happening in Windows 10 and MS Outlook after an upgrade or a  system update.

Maybe the PDF Maker add-on in Outlook needs to be removed and reinstalled, or ,  right-click on the file that you're trying to send and change the file association--->> Open with another app-->> Select Adobe Acrobat or Reader--->> tick the checkbox that says "Always open with this app" --->> click OK to commit the change.

If you don't have Acrobat or Reader installed in your system the handling and viewing of PDFs will always default to whatever is the default file association for that type of file by the operating system.

If you're using MS Outlook, you can also try and modify the outlook "Send As" type of attachment preference

Or, see here: Email a document from MS Office

You say it changes to XPS. Please tell us EXACTLY how you can tell this is happening?

Also, what is your email app?
