Whenever I am drawing a polygon using the tool, I am only allowed to click 3 points which forces the shape to complete as a triangle. Have already disabled the Touch Mode as mentioned in the forum.

When you draw the polygon don't click on the start point.

I do not understand how is it that I do not click on the start point when drawing the polygon. The first click would define a start, doesn't it? The perculiar effect is after the first click, the second click does not draw the first straight line between the 2 points (clicks). By the third click, triangle automatically is formed, even I have not right click to "complete" the drawing.

May be a bug of the Mac version from Adobe Acrobat.

It works for me on a Mac, but I have the subscription version, the version number 2015 implies that it's a perpetual license:
As you can see, I click once to start the polygon, then click a few more times, and then close the polygon by clicking on the beginning. Are you using a touchpad or a mouse to indicate the corners of your polygon?

It looked so easy in your video! Wished it’s that simple for me. I paid big bucks for the lifetime license and I only get to draw triangles! And cannot be the Mac version bug as can be seen you didn’t had the problem.
By the way, my problem is not only polygon. Realised same problem with “Cloud” tool --> auto-ended as triangular cloud by the 3rd click ; “Connected line” tool --> auto-ended a triangle without the 3rd side on the 3rd click.
Using mouse with settings General – Touch Mode disable.
Also tried touchpad with no difference.

What happens when you try it with Acrobat Reader DC?

Installed Reader DC. Same problems. Very frustrating and annoyed!
Reported this BUG to the software feedback. It seemed that I and the only one experiencing this.

If it also happens in the free Reader, then this is very likely not a problem with the perpetual license version. On my system, it also works correctly with the latest version of Reader DC, so it must be something that is specific to your system. Unfortunately, I don't have any explanation.
Here is what I do in order to draw the polygon using the touchpad:
1) Select Drawing Tools>Polygon from the comment tools
2) Tap once (or click once) on the touch pad to mark the start point
3) Move my finder on the touch pad to draw a line
4) Tap (or click if you don't have "tap to click' selected) to mark the end of the first segment
Repeat steps 3 and 4 as often as you like
5) Double tap/double click to end the polygon, or move the cursor to the staring point (you will see rectangle around the staring point, move your mouse into that rectangle) and click or tap once to finish the polygon.

Are you by any chance double-clicking to mark your points? When I do that, the polygon always ends up being a rectangle, because double-clicking is the command to close the path. You need to use single-clicks (or taps) to mark the points of the polygon.

Accidentally discovered why the “bug” happens. This auto-triangle drawing happens whenever I clicked the points for the polygon at the speed I am used to on the previous Pro version (version X)! To avoid resulting the auto-generating of triangle, I have to click slowly, interval of probably 2-3 seconds, between each click.
It is true to some other users commenting this version should be named Acrobat DC SLOW. So in the meantime I just have to exercise a lot more patience in using the drawing tools.
Same trick for drawing cloud comment.

Now that you know what is causing the problem, you may want to file a bug report about this: Feature Request/Bug Report Form

Have done that. Thank you for following through all this while.

I have the same problem for both polygons and clouds and it doesn't matter how fast I try to draw the object. I have not found a fix.
