Color Picker in Illustrator CC won't save small color changes for my object

I have a number of designs that I maintain in Illustrator covering the last five or so years.  I am currently running Illustrator CC version 21.1.0 (64-bit) under Windows 10.  I use the layers window to select an object and then double click the fill tool which opens the color picker dialog box.  In the past I have been able to type in a color such as 915ca6, click OK and the color would change to the that fill color.  This way I can use the same color fill across all my  documents.  However, in one of my designs I had the wrong color 925ca6.  When I tried to change it to 915ca6 in the color picker and then click OK,  it would not save the new color.  I found that if I changed the color to something completely different by dragging to a new color and clicking OK it would save the new color, then if I went back and changed it to the color I actually wanted 915ca6 and clicked OK it would seem to save it properly.  However, after saving, closing and reopening the document, the color would revert back to 925ca6 which is not the same color that is in my other documents.  Why won't Illustrator save the new color properly?  Does anyone know a work around for this problem?

    Jeffe, when working in CMYK documents it is better to specify colors in CMYK percentages instead of RGB (or Hex which is also RGB).

    RGB colors have to be converted to CMYK in CMYK documents.

    Can you check if there is a difference between the color profile used for your documents?

    Does the same happen when you use the color panel?

    Is that an RGB document?

    Can you please show a screenshot with layer panel and appearance panel open?

    When was your last computer restart?

    Does it work with new files?

    Yes, it is the same result with the color panel or color picker.  They are all CMYK color documents.  I tried changing the newer document to 925ca6 and it appears that it is also stuck but at 915ca6.  I can't change either of them to match the other.  I did try restarting my computer after you suggested to do that and it is the same problem.  Here is are the screen captures of the old and the new.

    New: 925ca6

    Old: 915ca6

    I use this bear paw in a number of images and while the two colors look pretty much the same on screen the difference is exacerbated in the final print media.  925ca6 prints darker than 915ca6.  The R is not grouped to the paw, but the paw is a grouping of the individual filled vectors that make up the paw.  I tried un-grouping the paw and the individual pieces are also stuck.
