I am trying to save artwork (mostly stationery) I've created in Illustrator as a high resolution jpeg in order to have the ability to print with decent quality and would appreciate any help! I've tried to save for web with the highest setting, but the quality was not where I wanted when printing. Help!

You don't.
Why on earth do you want to lose quality by making jpegs?
Print directly from Illustrator (or from a pdf if it has been made with sufficient resolution).

Well... I'd rather print from a pdf, but I have a file I was sending to someone who wanted to print something at costco on photo paper (I know, yikes!). obviously they won't print pdf's, so i am at a loss on how to create the jpeg with enough resolution to print at 300 dpi? I'm guessing there is an easy way to do it - I just don't know how.

Drag the PDF To Photoshop. Set it to open at 300ppi when asked. Save as jpg.

In Illy you may File>Export and choose JPEG, then set the Resolution>Depth and Image>Quality and Image>Color Model.
Save for Web will give you 72 PPI Resolution Depth and RGB Color Model.
