I have been using Adobe for over 30 years and this has never happened to me.
A few days ago I reinstalled windows 11 and Adobe CC.
Language "ENGLISH".
Today I had to edit a PDF document for a customer.
All the numbers were Arabic at once. No matter which font I choose, it remains Arabic.
If someone also has problems with this:
In the preferences under Application Language: it says (English with Arabic Support). Never ever heard about it.
But you can set it under Application Language to "Same as operating system".
Quit Acrobat and open a document.
When opened it, a dropdown menu came up with a choice for English or English with Arabic support.
tss, tss, tss.... adobe.!!
LOL

I'm not sure if I understood your input here as a support request or being sarcastic on the language option which is there since 2015.
Here is how to turn of Hindi Digits (١٢٣٤), so you can get the Arabic digits (1234)…
And here is where you change Acrobat's main language in Preferences

Yep, I have the same problem constantly; the uninstall is in Arabic, the OS is English, and it was installed in English. I am so tired of the poor support from Adobe while taking a King's ransom for poor production support

Yes, same problem on my bosses machine. You reinstall Acrobat, do all the settings for English, then a week later, it changes to English with Arabic support. To sort it, we have to uninstall, & reinstall.
As it says, why are we paying Adobe big bucks for a product that can't do something as simple as keeping the settings.
