I was having the same issue. Nightmare! Try this.
In Acrobat (mac), Go under view, then Enable New Acrobat. I think the old interface was working wiht the new update, possibly causing issues. If yours says Disable New Acrobat, maybe try that too.

I came across the same issue with multiple people in the past week. Adobe probably rolled out a botched software update.
When you first launch Acrobat, it works just fine. However, once you close it, it refuses to open for the next five minutes. Trying to open PDF documents or clicking on the Acrobat icon doesn't do anything, and it fails silently. Occasionally, you may see an 'update failed' message when you relaunch it five minutes later.
I think they released a patch. When you can open Adobe, go to Help > Check for Update and update to the latest. If that doesn't work, then uninstall and install it again. What a PITA.

What a horrible update as evidenced by numerous posts in the Adobe Community. PDF's are near impossible to navigate bogging down the operating system (MacBook Pro - M1 Max - Ventura 13.6.6) . The menus and GUI are horrible. This is causing significant loss in productivity. Adobe: Go back to the drawing board and test your product before dumping half baked software on the end user. In the meantime, I witched back to the older version until I find a better software for managing PDF's. After 25 years of Acrobat, it appears that this software is not going to be part of our workflow.
