Not true. An embedded font is normally subsettted and will not contain an entire font set, and in most cases cannot be used for editing. Some PDF editors (like Pitstop) CAN use an embedded subset as long as you don't need any character not included in that subset, and if the licensing allows it, otherwise you require to have the font on your system to edit.
To answer @Peter258508972yae , Calibri is not a normally installed Mac font, but if you have Office on your computer, it has its own fonts from in a "hidden" folder. You can find these fonts and copy them into your Font Book. Click on your Word application icon, and right-click to Show Package Contents. Within the Resources folder is a folder called DFonts. You will find the Calibri TT fonts there.
