Adobe Acrobat Electronic Signatures Desk Top App

I use adobe acrobat desk top app. Sometimes it lets me add an electronic signature field to a document, sometimes not. I'm not sure what is going on. It seems that not all icons display when I'm in edit mode. When the add a e-signature field icon is displayed, I can just drag and drop the field.

    Make sure you DON'T tick the "This documents requires signatures" check-box when creating the form.

    If you did, go to Prepare Form mode and select More - Revert to Acrobat Form, then try it again.

    If you tick that box it converts the form to Adobe Sign.

I just want to add an e-signature field with the little red post-it arrow, save, then send the pdf document myself via email. I don't want to send the pdf via the Adobe platform. Any help from experts out there is gratefully appreciated.
