Adobe Acrobat Pro DC | Edit PDF/Fill and Sign tools stop working after page 25

Hey, all,

I am working with Acrobat Pro to create ledger documents, and although I have encountered some problems, overall I have had great success with the program. Unfortunately, as the documents get longer and longer, it seems more issues develop. In particular, after page 25 of any documents that I create or edit in Acrobat, both the Edit PDF and Fill and Sign tools cease functioning. The Edit PDF option makes any text already existing on the page disappear, including text that I did not place such as page numbers and headers, and occasionally will create text boxes where all of the letters I type are invisible. Changing font or font size does nothing to alleviate this, and occasionally can 'infect' other pages of the document, turning their text invisible as well, seemingly at random (as an example, earlier one of my documents lost all text except vowels, single-digit numbers except 0, and the letter 'P'.) The Fill and Sign tool stops recognizing fields like it does normally, and starts creating text layer after layer on top of itself in an unsupported system font that is not present on my document- and at extremely large sizes that cannot be changed without causing the same missing text issues as the Edit PDF tool. I've attached an image to demonstrate what the documents look like after being 'infected' by the 25th page, all fields in the screengrab were originally filled with Times New Roman text, size 11: 

As I say, usually I do not have these problems with Acrobat, they seem only to arise after the creation of a 25th page in the document, and the effects are reproducible in any and all PDFs I work with whether I created them whole cloth in Acrobat or not. I have reinstalled the program and verified files, and Adobe can find nothing wrong. Is there a setting I can change somewhere to help? Or is it a problem with the processing power of my computer? I'm at a loss here, and creating whole new PDFs for all pages after 24 is just not efficient.
