Adobe Acrobat Pro - Digital Signature field disappears

I am designing forms for new employees and naturally those forms should be signed, preferably online. When I use the 'add digital signature' option (the field with the pen icon on it) I can sign the document in Adobe Acrobat itself, but when I save the PDF file and send it to my private email to test the result that field is gone. How do I add that field correctly?

The digital signature icon does not have a pen icon on it. Did you maybe convert the file to an Adobe Sign Form, by any chance? If so, revert it back to an Acrobat form and then add a Signature field using this icon:
