How do I view and edit metadata that is part of an adobe pdf file.

One can view the meta data by opening the "Properties" for the PDF file. Look under "File => Properties".

We have a similar need/question, but it's the ability to edit the metadata (specifically, the Producer attribute) -- not just view it.  We are using Adobe Acrobat DC version 2019.021.20061.  Adobe help pages seem to indicate you can edit the metadata:  https://helpx.adobe.com/acrobat/using/pdf-properties-metadata.html .  However, I am finding that none of the options outlined there actually work on the Producer attribute.  The problem is that the Producer field has become extremely long in the document due to frequent/repeated processing, and now the PDF cannot be processed by our application due to this length.  We need to find a way to truncate the Producer field.  Any suggestions on how to do this using Adobe Acrobat?
