Beginner ? - what Adobe product will help me to do the following on a MacBook Pro?

The first question is what application program do you currently have and in what state are those documents?

To do the OCR you WILL need Acrobat Pro DC. In fact, most, if not all of what you want to do can be done in Acrobat.

To organize them, that depends on what state they are in now and what kind of pages they are. 

>Are they digital files now?

>Are they loose pieces of paper with handwritten notes? (Note: OCR cannot read handwriting)

>Are they loose piece of paper with typewritten notes? (Note: depending on the age and quality of the content, OCR accuracy will be affected.)

>When you talk about deleting birthdates, names, do you mean deleting lines of text or blurring them, or do you want to want to redact the text (black it out so that its removal from viewing is obvious).

>Lastly, what is your end-product expectation here? It's a heck of a lot easier if I/we know where you want to go rather than provide suggestions without having a clue as to what you wish to get.
