Can Acrobat Preflight detect what program the pdf was created in

Is there a way to find out what program the pdf was created in with preflight in Acrobat?

I want to use this profile in my prepress workflow

Yes. Go to "Custom checks" and create a new check. Add to it a command called "Producer". This will allow you to compare the Producer field in the file's metadata to a certain value.
