Can I resize the toolbars in Acrobat Pro DC?

Actually, I have two questions:

1) I need as much reading area as possible at a size where I can easily edit text, but when I have a second toolbar open I can't quite get a full page on the screen without making the text smaller. Is there a way to make the toolbars smaller?

2) I'm opening PostScript files all day long. Is there a way to make the "open" box default to "all files" instead of Adobe PDF files? I must have to change that 50 times a day (or more).
