I installed a free trial of Acrobat on my Windows 10 laptop and have been totally unable to find any kind of tools beyond "Edit," "Convert," and "E-Sign." I don't even have a hamburger menu that I can see. All I'm trying to do is embed fonts, and needless to say this has been driving me nuts. I'm sure I'm making some kind of dumb mistake, and if someone could point me in the right direction I would appreciate it.

Unfortunately, Adobe keeps changing things in the Acrobat UI, and usually not for the better.
Do you not have a Menu button at the top-left corner? What happens when you click the red icon there? If it opens a pop-up menu, look for "Disable new Acrobat" and click on it.
If you can't find it, post a full-window screenshot.

@Joseph387563199bo4 also, did you download from the offical Adobe website versus a 'spoofing Adobe site?' Acrobat Reader and not Acrobat Pro...two similar but different applications that many people do get confused. Reader (free) provides basic features, while Acrobat Pro (Paid) offers advanced features.

They are not two different applications any longer. It's the same application, but it switches from one version to another, depending on whether you have a valid subscription.
It is good advice to always download it directly from the Adobe website, though.

The screenshot that you have shared above is for the web application. To embed the fonts, you will need the Acrobat subscription. The feature is not available in Acrobat Web or the Reader desktop application.
If you have an Acrobat subscription, try installing the application from its page: https://helpx.adobe.com/download-install/kb/download-install-acrobat-subscription.html.
