Hi all,
Even I enable the Edit > preference > self defined color enabled, the result is the same as before. Don't know why? Could some experts give me a solution please.
FYI, my document font is simplified chinese.

Hope you are doing well and sorry for the trouble. As described you are unable to change the font and background color.
Are you trying to change the font color in the Fill and Sign tool? If yes, please check the steps shared in the help article https://community.adobe.com/t5/acrobat-discussions/change-font-colors-in-fill-amp-sign-tool/m-p/1161...
Do you get any error message? If yes, please share the screenshot of the same for a better understanding.
What is the version of the Adobe Acrobat DC you are using? To check the version go to Help > About Acrobat and make sure you have the latest version installed. Go to Help > Check for Updates and reboot the computer once.
You may also try to reset the Acrobat preferences as described in the help page https://community.adobe.com/t5/acrobat-discussions/how-to-reset-acrobat-preference-settings-to-defau... and see if that works.

My Adobe DC version is 2021.005.20060 and with full asian pack installed.

Your screenshot shows that you use Acrobat Reader. Acrobat Reader can't change the document.

For changing the font color, try the follwing steps:-
In your file, click Ctrl + E to open the properties bar. Double click inside your text box, which will make the Text Color setting appear on the Properties Bar. Highlight the text in your text box, and change the text color on the Properties Bar.
For changing the background color, try the follwing steps:-
Choose Tools > Edit PDF. The Edit PDF toolset is displayed in the secondary toolbar. In the secondary toolbar, choose More > Background > Update. Click OK, or make other changes to the background options and then click OK.

Sorry, what you suggested is simply doesn't work out.
For Ctrl + E, it just say "unchoosen tool"
For Edit PDF, it seems it is only available in paid version.

Certainly, Edit PDF is only in the paid version.
But you are trying to edit, correct? Or are you trying to set accessibility options to change colours just for your display? We are all having to guess, so we would like detail so we do not waste your time.
Your screen shot shows a document but it does not show any problem.

Hi,
I'm not going to edit the document, just read it in Adobe DC, i've set preference in changing the font color and background color but in vain.
The attachment is the result after applying the font changed to green and background to black, but the result just didn't reflect the change.
