Where can i find the crash logs / log files for Adobe Acrobat Pro DC 10.0?
The application seems to crash when I use the "Edit PDF" function...

Could you please tell what Operating System do you have- Windows/Mac?
Is this happening with a single file or with other files as well?
Try to check if there is any update available for Acrobat, open Acrobat>Help>Check for updates.
If installing updates doesn't fix the issue , try to repair Acrobat, Help>Repair Installation.
If that doesn't fix the issue , try to remove Acrobat with Cleaner tool from here (for Windows)- Download Adobe Reader and Acrobat Cleaner Tool - Adobe Labs and then reinstall Acrobat.

I have Windows 7 Professional 64BIT. 16GB RAM w/ Intel i7 @ 2.80GHz.
My original question was if the Adobe Application stored its own crash logs to help you better troubleshoot. Also i noticed that i have the 32bit version of acrobat running.
Is there a 64bit version that i can install? Also note that i have an account with Creative Cloud that allowed me to install in the first place.

Adobe Acrobat doesn't store crash log on machine, however you can find details about the crashes and errors with Acrobat and Reader Process Monitor tool found here: Download Acrobat and Reader Process Monitor Tool - Adobe Labs .
There is no 64-bit version available right now but Acrobat 32-bit has been tested to run on a 64-bit machine on Windows Operating System.

Try running Acrobat Distiller for some time and check if its running without any issue. To launch Acrobat distiller, press Windows key on your keyboard and type distiller.
Also, try logging out from the application and then login again and perform the same task.

I have tried this and distiller does not show any issues. Also i have tried logging in and out as well as uninstalling/reinstalling the entire cloud suite and applications.

In the meantime, you might try to get rid of all traces of Acrobat by uninstalling Creative Cloud completely using Creative Cloud Cleaner tool found here: Use the Creative Cloud Cleaner Tool to solve installation problems, restart the computer and then download Creative Cloud app from here: Download Adobe Creative Cloud apps | Free Adobe Creative Cloud trial.
