Is there a way to set the Adobe print settings systemwide to 300 DPI? Was thinking of a GPO but not sure.

This request is too vague to even begin to answer. First of all, what specifically do you mean by print settings? In terms of creating PDFs? or for printing them? What do you mean by "systemwide". Please explain more what your "customer" is asking. An example, perhaps?

"they also email a lot of PDF files"

Which means....?

Systemwide=all the users on the network using Adobe DC Pro. The org has specific requirements as in, they want all their PDF files to print in 300 DPI, they want (I know this is a stretch) all the PDF files they email out in 300 DPI. Just trying to get a bearing on just getting the print settings deployed for now.

It is unclear to me why you would do that, as there are legitimate reasons for using a different DPI value.
