Is there a way to change the default so that only the current tab closes? Rather than the default warning to close only current or close all?

Yes - but I'm curious if there is a way to just close the current tab when I click on the "X" in the top right corner

The X in the right corner is for shutting down the entire program. Just click on the small X on the document tab (like you would a browser tab).

But when you click the small x to close an individual tab only, you get the annoying warning asking if you want to close just that tab or all tabs. If I wanted to close all, I would use the X in the upper most corner. I, too, would like to know if you can turn that pop up box off in the preferences.

I just found the resolution to this problem.
To turn on or off the pop up that warns when you try to close the app when multiple tabs are open enable "Prompt before closing multiple tabs"
Go to Edit, Preferences, General, look in the "Basic Tools" section.
