I bought adobe acrobat pro about 10 years ago and have been using it on Mac ever since.  I just bought a new macbook air, with OS Monterey, and the software won't open when I transferred everything over using time machine.  Is there a way to update my version of acrobat so it will work on my new computer?

Upgrades from Acrobat 2017 to Acrobat 2020 are available; no earlier versions. Subscription to Acrobat DC recommended instead.

Just seems crazy that I bought a product and am now being told I can't use it, even though it works fine.  Instaed, I'm told I should rent the same product I've already bought, because the company wants to make more money that way.

You can still use what you bought, but you have to run it on a compatible operating system, and Apple has been making its new operating system less and less backwards-compatible with each release, so your issue is with them. Windows can run older applications (even if not officially compatible) relatively fine.
