How to convert all text in a book from cmyk to black only.

I have a 112-page PDF book from my client. Oddly, all the body text is a cmyk mix and I need to convert to solid black only. Is there a way to do that in PRINT PRODUCTION tab? It would be terribly time-consuming to edit each page separately. Appreciate the help.

You can determine the text color using the Output Preview tool (show: cmyk and rgb), then make a custom preflight fixup to map that color to black only. Note, you will need to duplicate an existing profile in order to allow editing. The example attached is changing a blue color to black.

not working on text. Only allowing for converting to a different profile, but not changing the color of the text.
