If your need is to edit text in a scanned PDF file, you should run the OCR feature in Acrobat.  You'll find it in the Enhance Scans tool set as "Recognize Text."  Visit the Settings button first, and ensure your output is "Editable Text and Images".

Thanks, yes, I know, but this would be helpful only for few pages... I mean when the book has, for example 200 pages. Then you need, for example, clean each page (jpg coming from scanner) from spots or marks, un-inclinate the pages badly scanned, rotate some pages, perhaps divide some other pages, or white out the last paragraph...and finally export to pdf. There is an app, Abby Fine Reader who makes all this. Which one of the Adobe application does feature all this work of making a good pdf-book starting from the jpg images of its scanned pages? Thanks a lot for your replay. José Maria VIGIL.
