How to stop Acrobat from "reading" my scores as text?

Hi

I use Acrobat Reader to extract score pages from a music score pdf. Everytime I open a pdf, AR starts to try to convert the text to text, or that is what I suppose is going on. But my scores are not going to be converted, so I have to cancel this function every time. How can I stop AR from doing that by default?

And how can I have the left sidebar show miniatures by default?
