I received emails from a client that I need to convert to pdf that have attachments within the email. The email converts into the new pdf, but the date of the email is 9/27/2019 10:00AM. In the newly created pdf it's showing 8/18,2021 9:04 AM. Can anyone help me know why that is. If I right-click on the email and choose convert to Adobe PDF, it will convert fine and have the correct date. But it won't include the attachment.

Ran into the same issue. I don't know exactly what it is, but it seems like it is an Outlook issue. If instead of saving the email I "Forward as Attachment" and then convert it - it puts the right date on it.
It also seems like only emails sent to particular people are dated wrong.
My theory is that either the mailbox settings are weird for that recipient, or that recipient had their account terminated.
Let me know if you can replicate the issue - send an email that converts to the wrong date when you convert it to PDF.
