I have Acrobat Pro DC through my Creative Cloud subscription. Current Version 2022.002.20212.
I often use the Header & Footer feature to add footers to PDF documents. Up until recently, I have always been able to copy or cut text from a MS Word document and paste it into the Left Header Text box in the Add Header and Footer dialog box. This helps me keep things consistent and minimizes typos. But today, that function no longer works. I can cut and past the text as a text box on a PDF, but not into the Add Header and Footer fields. I've tried the obvious things like closing all the programs and opening them back up again, as well as rebooting my computer. These things did not solve the problem. Please help.

I tried to reproduce the issue on my end and it's working fine.
Please try to repair the installation from the help menu (Win Only) and see if that works.

What happens when you try to paste text in the header and footer in PDF? do you get any error message? If yes, please share the screens hot of the same .
Also, try with a different PDF file and check if its a file-specific issue or not.
You may also try to create a new test user profile with full admin rights in Windows or enable the root account in MAC and try using the application there and check.
