You'll need to use the Properties Toolbar. Cmd/Ctrl + E.

In Acrobat DC, the new Color Picker and Line Weights tools don't have all the same tools. It's a soree issue for me that I feel Adobe really needs to address. I wrote about that here: The Case for Still Using the Deprecated Features in Acrobat, Part 1: The Properties Toolbar
