Rich Text Formatting Not Working Even Though Box Checked

I'm trying to create templates in Acrobat Pro (latest version on a 2011 MacBook Pro running OS X Sierra). When I create the form fields and format them, I always check the Allow Rich Text Formatting Box, but it's hit or miss whether or not it actually works. Most of the time not. I save the PDF and then open it up in Adobe Reader, and sure, I can change the words, but much of the time, even though the formatting pane is not greyed out, I can't make any other changes, not to the font or the color, line spacing etc. Occasionally, if I select a few letters or words in the middle of a text field, I can change the font on that, but what good is that, when the letters on the ends won't change?

Anyone know what I'm doing wrong?

You can't select text at the end?

I can select it. It just won't change when I use the rich text formatting pane. Let's say I want to change the text size. I select the text, pull down the drop down to change the size, release, and nothing happens. Or I want to adjust the line spacing. I click on "More," bring up the dialog box, pull down the drop down to change the spacing from single to 1.5, hit closed, the box closes, but nothing happens.

When I said sometimes I could affect changes to characters in the middle of the line, that's what I meant. Sometimes changes will work on those, but it's random.

I can't see this problem on MS Windows.
