I have a 300+ page book, and I'd like to save multiple pages for quick reference, like so:
Is there a way to do this?
Also, is there a way to control space between?

You could use the print multiple options:
If you are on macOS, you can't print to Adobe PDF virtual printer.

On a Mac the only way to do it (beside manually) is by using a script, like this (paid-for) one I've created that basically mimics the Adobe PDF virtual printer and allows you to produce PDF files with multiple pages from the original on each sheet: https://www.try67.com/tool/acrobat-print-multiple-pages-per-sheet

when i try to do this, it just shrinks one of the images down to the size it should be and will only print one on the page in that small size. like imagine your reference picuture with all white space except for the top left corner image. How do i get it to print multiple copies of the same image on the one sheet? after all this time with adobe existing you would think this would have been addressed....

In the pages range field just enter the same page number multiple times, like this: "1,1,1,1".
Then you'll get four copies of page 1 on the same printed page.

There are other Adobe options outside of Acrobat. In InDesign, you can use the Image Catalog script, in Bridge, you can use the Output Workspace. Here is a link to instructions:
