I am running macOS BigSur 11.6.1 and all the other apps are working except Acrobat, which says "license expired"-
Adobe Acrobat has been running with grace license on this device belonging to Complete.
I have a full license, I uninstalled it, signed out, signed back in and reinstalled but keep receiving the same error. All of the other Adobe apps are up to date and working fine, the problem is only happening with Acrobat.
Please help, thank you!

Thanks for sharing the screenshot.
We see that you are a subscriber of Adobe Creative Cloud all apps membership. You should be able to access all the CC apps, including Acrobat DC.
Try these steps:
1- Quit the CC desktop app.
2- Uninstall Acrobat DC using cleaner tool: https://www.adobe.com/devnet-docs/acrobatetk/tools/Labs/cleaner.html
3- Once done. Download the Acrobat installer from here: https://helpx.adobe.com/acrobat/kb/acrobat-dc-downloads.html keeping CC desktop app closed.
4- Once setup is complete, launch Acrobat DC and see if that works.
