Is there some way to automatically delete signatures from a PDF when printing to PDF (flattening document)?

After they've been signed? No (unless you signed them yourself).

But a printed digital signature is meaningless, anyway.

Thanks for the reply.

Trying to avoid someone flattening a PDF and extracting signature as an image. Are you aware of any plugins that might do the job?

An image of a digital signature is also meaningless, although many people fail to understand that...

One possible solution, though, is to set the field's Appearance to "Visible, but doesn't print", under Properties - General:
